Our spotlight turns to “Age Dashi Tofu”-lightly fried tofu resting in a savoury dashi broth, topped with grated daikon, scallions, and ribbons of nori. Prepared to perfection by @kofukudelhi
The crisp exterior gave way to a silky, custard-like centre, while the broth and toppings brought layers of umami, freshness, and depth.
A deceptively simple dish that showcases the elegance of Japanese cuisine. 😊
Goes famously well with a Junmai sake.

We caught up with two of Sake’s unique packaging formats at the 28th floor Oko restaurant at The Lalit New Delhi.
"Issho-bin"— the standard large-format sake bottle and "Honni-daru"- a straw covered sake barrel.
🍶
In sake, the foundation is the Go (合) — a traditional unit of about 180 ml, once considered a single serving. From this came the iconic sake formats still used today:
▪️ 180 ml = 1 Go The compact personal serving — somewhat like a wine Piccolo. Small, approachable, and perfect for individual enjoyment. 🍶
▪️ 720 ml = 4 Go The modern premium sake standard, comparable in purpose to a 750 ml wine bottle. Widely used for Ginjo and Daiginjo styles because it balances elegance, gifting appeal, and freshness. ✨
▪️ 1.8 L Isshobin = 10 Go The classic restaurant and izakaya format — the sake world’s equivalent of a Magnum in presence and sharing culture. A favourite among serious sake enthusiasts and trade professionals. 🎌
▪️ 18 L Tobin= 100 Go Mostly used for storing competition-level sake, especially in Tobin-gakoi, where the finest free-run sake is separated and presented for judging. Often associated with some of the most refined sake a brewery can produce.
Different vessels, different purposes — yet both representing prestige in the world of sake.

Landing into Yonago in peak winter, the landscape below feels almost distilled—snow-laden fields, quiet settlements, and the brooding presence of Mount Daisen. This short captures that gentle entry into Tottori, where winter is not just scenic, but central to sake brewing.
Tottori Prefecture is served by two airports: Yonago Kitaro Airport in the west and Tottori Airport in the east—both offering efficient access from Tokyo.
Breweries visited while we travelled from west to east- Inata Honten (Yonago), Otani Shuzo (Kotoura), Umetsu Shuzo (Hokuei), Yamane Shuzo and Nakagawa Brewery (Tottori city), Suwa Shuzo (Chizu) and Gensui Shuzo (Kurayoshi).
The return, fittingly, was via Tottori Airport.

In this video, I taste KAZA G-25, a distinctive barley shochu from Sakagura Ohtemon (Miyazaki, Japan) with my Sommelier friend Sagar Nath who is also the Founder of a thriving wellness company called Shunya India that is based in the Himalayas.

The Shochu was received directly by me from Sakagura Ohtemon and I had to taste it with somebody equally passionate as me regarding such niche beverages.
With no technical data available about the Shochu at the time of the tasting, it was more or less a “blind tasting”. Later we learnt hat this particular Shochu uses a whisky yeast and hence is very unique.
