A sake milled to Daiginjo levels but still called a Junmai Ginjo? Well, it is because the Brewery surpasses the milling rates for various categories. Their Daiginjo’s are 40% or lesser. This sake is milled to 50% and has aromas of melon, Ā red apple and pear. It comes from the cold region of Iwate, known for its delicate flavoured and aromatic sakes. All the sakes from this brewery are Genshu, that is undiluted.
